A tribute to the Drôme, where the sweetness of honey and the freshness of pear juice with the subtle aromas of lavender. Together, they reveal another emblem of the region: the effervescent Clairette de Die Doux.
This cocktail is made with Clairette de Die Doux from Maison Jaillance.
Ingredients
1 teaspoon liquid honey
5 cl pear juice
1 cl lime juice
1 small drop of lavender essential oil (no more, one drop goes a long way!)
8 cl Clairette de Die Doux Maison Jaillance
Recipe
Add ingredients one by one in a pretty glass
Finish with Clairette de Die Doux
Stir gently so as not to break the bubbles
Add a few ice cubes
A thin slice of pear on a spike with a sprig of lavender from the garden.

To enhance the flavour of Bulles de Muscat, Jaillance has teamed up with Juliette Cothenet, France's Best Bartender (Scott Cup 2023). A graduate of the Institut Paul Bocuse (now the Institut Lyfe) and the prestigious Harry's New York Bar, she approaches alcohol-free mixology as a fully-fledged area of gastronomy, using natural ingredients such as ginger and citrus fruit.
