On the nose

Aromas of ripe black fruit, oriental spices and licorice with the freshness and minerality typical of the appellation.

At the palace

A typical Saint Joseph on a granite base.

The palate remains taut, racy, with great personality. The tannins are very fine and the finish remarkably persistent.

Soil

Terraced hillside vineyards; granite soils

Breeding

Northern Côtes du Rhône, right bank of the Rhône.

Continental with Mediterranean influence.

Harvest

Hand-harvested. Selection of old vines and slopes showcasing the appellation. Traditional maceration in concrete vats at 28°C.°C; regular pumping over using a marc sprinkler or punching down.

Winemaking

Hot maceration (30°C) for 2 weeks. Regular tastings to decide when to run off the skins, under wood, before malolactic fermentation in barrel.

Breeding : In new 400L barrels for 30% and 3-wine barrels for 70% for 18 months.
